Asparagus with yogurt Dressing

Ingredients
- 1 lb. fresh asparagus
- 1/2 cup plain yogurt
- 1 small clove garlic, crushed
- 1 Tbsp. chopped parsley
- 1/ tsp. salt
- 1 small head Boston or Bibb lettuce
- 1 hard-cooked egg yolk; sieved
Directions

Snap off tough ends of asparagus. Remove scales with knife or peeler. Cook asparagus in boiling water about 10 minutes or until crisp-tender. Drain Cool and place in refrigerator to chill. combine yogurt with garlic, parsley, and salt; stir well. Chill Place asparagus on bed of lettuce; top with yogurt dressing and sprinkle with egg yolk.
