Flat Bread
(from ganzelini’s recipe box)
Should yield about 8 “loafs”
Prep time: 15 minutes
Cook time: 5 minutes
Serves 8 people

Ingredients
- 1 lb Flour
- 1 1/4 C Water
- 1 Package Yeast
- Sugar or Honey
- Salt
Directions

Warm the water

Dissolve the Sugar/Honey in it

Add Yeast to water and set aside

Measure out your flour into a stand-mixer bowl

Add salt to flour

Optionally add any dried herbs you’d like

Mix up the dry ingredients

Add wet mixture to dry mixture and mix using the kneading attachment

Add water/flour to get the right consistency (slightly sticky)

Remove the dough from bowl and wrap with cling-wrap and place in fridge overnight if possible, otherwise let rise in a warm area

Preheat the oven to 350F either with a stone or upside-down 10" cast iron pan

Pull off enough to make a 9" disc

Either pull it or roll it out to 9" disc

Sprinkle the stone/pan with corn meal

Place the disc on the cooking surface

Cook for 3-5 minutes
