Avo-Taco Brunch Pie

Ingredients

  • 1 lb. lean ground beef
  • 1/4 cup chopped onion
  • 1 can (8 oz.) tomato sauce
  • 1 pkg. (1 1/4 oz.) taco seasoning mix
  • 1/3 cup sliced pitted ripe olives
  • 1 can (8 oz.) refrigerated quick crescent dinner rolls
  • 1 1/2 to 2 cups crushed corn chips
  • 1 cup shredded Cheddar cheese, (about 4 oz.)
  • Shredded lettuce
  • Tomato slices
  • 1 avocado, peeled and sliced

Directions

  1. Brown ground beef and onion in a large skillet, drain off drippings. Stir in tomato sauce, taco seasoning mix and olives.

  2. Separate crescent dough into 8 triangles. Place triangles in ungreased 9 to 10-inch pie plate, pressing to form a crust.

  3. Sprinkle 1 cup corn chips over bottom of crust. Spoon meat mixture over crust and chips. Spread sour cream over meat mixture, cover with cheese. Sprinkle with remaining corn chips.

  4. Bake in a preheated 375 degree oven for 20 to 25 minutes or until crust is golden brown. Serve in wedges topped with shredded lettuce, tomato slices and avocado slices.
