Bacon Quiche Tarts

Serves 8 people

Ingredients

  • 2 large eggs
  • 6 oz. cream cheese
  • 5 tsp. 2% low-fat milk
  • 1/2 cup shredded Colby cheese
  • 2 Tbsp. chopped green pepper
  • 1 Tbsp. finely chopped onion
  • 1 pkg. refrigerated crescent rolls
  • 5 bacon strips, cooked and crumbled

Directions

  1. Preheat oven to 375 degrees.

  2. In a small bowl, beat cream cheese and milk until smooth.

  3. Add the eggs, cheese, green pepper and onion.

  4. Separate dough into eight triangles, press onto the bottom and up the sides of greased muffin cups.

  5. Sprinkle half of the bacon into cups, pour the egg mixture over bacon, top with remaining bacon.

  6. Bake uncovered at 375 degrees for 18 to 22 minutes or until a knife inserted near the center comes out clean out clean. Serve warm.
