Ingredients
- 6 apples
- 1/3 cup mincemeat
- Grated rind of 1 lemon
- juice of 1 lemon
- 6 Tbsp. light-brown sugar
- 2 Tbsp. honey
- Cream or soft custard (optional)
Directions

Wash apples and core without cutting through stem end. Hollow out apples, leaving a shell about 1/2 inch thick.

Chop pulp fine and combine with mincemeat and lemon rind. Mix well and fill apples. Arrange in baking dish with the lemon juice and water to make 1/2 cup. Sprinkle apples with sugar, then drizzle with honey.

Bake in preheated 350 degree oven, basting occasionally, 50 to 60 minutes, or until one. Serve slightly warm, with cream, if desired.
