Baked Chop Suey

Ingredients

  • 2 cups diced , cooked chicken
  • 2 Tbsp. margarine
  • 1 1/2 cups chopped onion
  • 1 1/2 cups chopped celery
  • 1 cup chopped green pepper
  • 3 Tbsp. chopped pimiento
  • 1/2 cup uncooked long grain rice
  • 1 can mushroom soup
  • 2 cups milk
  • 2 Tbsp. soy sauce
  • 1 (3 oz.) can chow mein noodles

Directions

  1. Saute vegetables in margarine until golden. Add remaining ingredients, except noodles. Turn into greased 13 × 9 inch casserole; cover.

  2. Bake in 350 degree oven for 1 hour, stirring occasionally. Add more milk if needed. Sprinkle noodles on top and return to oven, uncovered for 5 minutes.
