Baked Halibut and Rice

Ingredients
- 3 Tbsp butter or margarine
- 1 medium onion, chopped
- 1 cup thinly sliced celery
- 1 cup thinly sliced carrots
- 4 Tbsp. chopped parsley
- 1/2 tsp. dill
- 1/2 tsp. thyme
- 1 tsp. salt
- 3 cups cooked rice
- 1 1/4 cups milk, scalded
- 3 eggs, beaten
- 3 lbs. halibut steak, about 3/4 inch thick
- Salt and pepper
- 1 Tbsp. melted butter

Preheat oven to 350 degrees.

Melt butter or margarine in a skillet. Add onion, celery and carrots. Cook over medium heat until tender. Add 2 Tbsp. parsley, dill, thyme, salt and rice. Mix well. Cook until heated. Spoon rice into a greased 13 × 9 × 2 inch baking dish.

Sprinkle fish with salt and pepper. Arrange on top of rice mixture. Drizzle with melted butter. Bake 40 minutes. Sprinkle with remaining parsley.
