Baked Parsnips

Ingredients

  • 6 to 8 parsnips
  • Nonstick cooking spray
  • 2 cups milk
  • 2 eggs
  • salt and ground black pepper
  • dash ground nutmeg
  • about 1/2 stick butter cut in small slices

Directions

  1. In large saucepan, boil parsnips in salted water until just tender. Do not allow to overcook or they will get soggy.

  2. Cool, peel and slice lengthwise and place in a baking dish coated with nonstick cooking spray.

  3. In a bowl, mix together milk, eggs, salt, ground black pepper and nutmeg. Pour mixture over parsnips and dot with butter. Bake at 325 degrees 45 minutes or until egg mixture is set.
