Basic Spaetzle Dough (Tradional German dumplings

Ingredients

  • 2 eggs, slightly beaten
  • 1 1/2 cups all-purpose flour, sifted
  • 1/2 cup milk
  • 1 tsp. salt
  • 1/4 tsp. baking powder

Directions

  1. Bring a saucepan of salted water to a boil; reduce heat and maintain a simmer.

  2. In a bowl, stir all ingredients together . Place a colander over the pan; pour about 1/4 of the batter into the colander and press dough through the holes with a plastic spatula, forcing it into the hot water.

  3. When the spaetzli start to float to the surface, cover the pan and keep covered until the spaetzli swell and are fluffy.

  4. Remove the dumplings and repeat the procedure with the remaining batter.

  5. To finish noodles, pan fry in butter, the traditional way.

  6. makes 3 1/2 cups
