Ingredients
- 2-3 cups sugar (2 Tbsp)
- 2 cups water (1/4 cup)
- 1-2 Tbsp vanilla
- 1-2 Tbsp grated nutmeg
- 1-2 Tbsp cinnamon
- 1-2 Tbsp roasted ginger
- 1-2 Tbsp cardamom
- splash of rum
- 10 oz salted mixed nuts
- 8 oz unsalted whole cashews
- 8 oz unsalted whole almonds
Directions

Mix water, sugar, spices, and rum in a saucepan. Cook until the water evaporates, making a simple syrup.

Put all nuts in large bowl. Pour syrup mixture over nuts, coating liberally.

Spread nuts on parchment covered baking sheets. DO NOT ladle all excess syrup on nuts – this avoids making it a nut brittle.

Bake in oven at 325, rotating pans as necessary until they reach desired caramel color and crunchiness.

Cool on wire racks.
