Summer Rolls with Dipping Sauce

Ingredients

  • 8 (9-inch) rice spring-roll wrappers
  • Lettuce leaves
  • Shredded carrot
  • Shredded cucumber
  • Basil or mint leaves
  • Leftover Flank Steak (see recipe)
  • Crushed peanuts
  • Squeeze of lime
  • Sauce:
  • 1/2 cup coconut milk
  • 1 tsp soy sauce
  • 1/4 cup peanut butter

Directions

  1. Set up a bowl of warm water, a damp towel and wrappers. Dunk each wrapper in the water, then spread it out on the towel. Add to each a lettuce leaf, some shredded carrot and cucumber, several basil or mint leaves, some sliced steak, a sprinkling of crushed peanuts, and a squeeze of lime. Fold two sides into the center, then roll up to enclose the filling.

  2. For the sauce, blend coconut milk, soy sauce and peanut butter.
