Ingredients
- 8 (9-inch) rice spring-roll wrappers
- Lettuce leaves
- Shredded carrot
- Shredded cucumber
- Basil or mint leaves
- Leftover Flank Steak (see recipe)
- Crushed peanuts
- Squeeze of lime
- Sauce:
- 1/2 cup coconut milk
- 1 tsp soy sauce
- 1/4 cup peanut butter
Directions

Set up a bowl of warm water, a damp towel and wrappers. Dunk each wrapper in the water, then spread it out on the towel. Add to each a lettuce leaf, some shredded carrot and cucumber, several basil or mint leaves, some sliced steak, a sprinkling of crushed peanuts, and a squeeze of lime. Fold two sides into the center, then roll up to enclose the filling.

For the sauce, blend coconut milk, soy sauce and peanut butter.
