Ingredients
- 4 oz. cream cheese
- 4 oz. goat cheese
- 1/2 cup chopped sun-dried tomatoes (packed in oil)
- 1/2 cup thawed and well-drained frozen chopped spinach
- 8 fresh basil leaves, chopped
- 1 garlic clove, minced
- Kosher salt and black pepper
- 2 long zucchini, thinly sliced lengthwise (use a mandolin if you have one)
Directions

In a medium bowl, use a fork to mash the cream cheese and goat cheese. Mix in the sun-dried tomatoes, spinach, basil and garlic. Season with salt and pepper.

To assemble the pinwheels, spread a heaping tsp of the cheese mixture on each zucchini slice. Starting at one end, roll the zucchini toward the other end. Place the pinwheels upright on a serving tray.
