Ingredients
- 3 tsp salt
- 1/4 tsp black pepper
- 2 lbs. chicken wings, tips removed and separated at the joint into 2 pieces
- 1/2 cup olive oil
- 1/3 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1 tsp lime zest
- 2 tbsp. fresh lime juice
- 1 tbsp. honey
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp red pepper flakes
Directions

Preheat the oven to 450. Line two large baking sheets with parchment paper.

Sprinkle 1 tsp of the salt and the black pepper over the chicken wings and set aside.

In a large bowl, combine the olive oil, cilantro, parsley, lime zest, lime juice, honey, cumin, chili powder, red pepper flakes, and remaining 2 tsp salt and stir until the honey has dissolved. Set aside about one-third of the chimichurri for serving.

Add the wings to the bowl with the remaining chimichurri and toss to coat well.

Place the coated chicken wings on the prepared baking sheet, evenly spaced apart. Roast for 20 minutes. Using tongs, flip the wings and roast for 15 minutes more, until some of the edges are charred and the meat is cooked through.

Transfer to a serving platter. Brush the reserved chimichurri over the wings and serve.
