Roasted Tomato with Basil

Ingredients

  • 1 pint grape tomatoes, halved
  • 1 tbsp. olive oil
  • Salt and pepper
  • 4 oz. goat cheese
  • 1 tbsp. chopped basil
  • 2 tsp dried oregano
  • 1 garlic clove, grated
  • Crackers

Directions

  1. Toss tomatoes with olive oil on a rimmed baking sheet; season with salt and pepper. Roast at 400 until softened, 15-20 minutes. Mix goat cheese with basil, dried oregano and garlic. Spread on crackers and top with the tomatoes and torn basil.
