Ingredients
- 1 lb. chopped bacon
- 1 shallot, sliced
- 1/2 cup cider vinegar
- 1/2 cup brown sugar
- 1/2 cup water
- 1 tbsp. chopped thyme
- Pepper
- Goat cheese
- Crackers
- Chopped chervil or parsley
Directions

Saute bacon and shallot in a saucepan over medium heat until browned, about 20 minutes; pour off the fat, then add vinegar, brown sugar, water and thyme to the pan and cook until jammy, about 10 minutes. Season with pepper; let cool. Spread goat cheese on crackers and top with the bacon jam and chopped chervil/parsley.
