Bacon Jam with Goat Cheese

Ingredients

  • 1 lb. chopped bacon
  • 1 shallot, sliced
  • 1/2 cup cider vinegar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 tbsp. chopped thyme
  • Pepper
  • Goat cheese
  • Crackers
  • Chopped chervil or parsley

Directions

  1. Saute bacon and shallot in a saucepan over medium heat until browned, about 20 minutes; pour off the fat, then add vinegar, brown sugar, water and thyme to the pan and cook until jammy, about 10 minutes. Season with pepper; let cool. Spread goat cheese on crackers and top with the bacon jam and chopped chervil/parsley.
