Mom’s Spicy Cucumber Kimchi

Ingredients

  • 1/4 cup rice vinegar
  • 2 tbsp. gochujang
  • 1 tbsp. soy sauce
  • 1 1/2 tsp sugar
  • 1 1/2 tsp sesame oil
  • 1/2 tsp sesame seeds
  • Dash of beef dashida (optional)
  • 3 Kirby or Persian cucumbers, thinly sliced
  • 1/2 tsp toasted sesame seeds

Directions

  1. Whisk together rice vinegar, gochujang, soy sauce, sugar, sesame oil, sesame seeds and beef dashida in a large bowl. Add cucumbers; stir until coated. Sprinkle with toasted sesame seeds. Chill, covered, at least 1 hour.
