Ingredients
- 1/4 cup rice vinegar
- 2 tbsp. gochujang
- 1 tbsp. soy sauce
- 1 1/2 tsp sugar
- 1 1/2 tsp sesame oil
- 1/2 tsp sesame seeds
- Dash of beef dashida (optional)
- 3 Kirby or Persian cucumbers, thinly sliced
- 1/2 tsp toasted sesame seeds
Directions

Whisk together rice vinegar, gochujang, soy sauce, sugar, sesame oil, sesame seeds and beef dashida in a large bowl. Add cucumbers; stir until coated. Sprinkle with toasted sesame seeds. Chill, covered, at least 1 hour.
