Ingredients
- 1/2 tsp distilled white vinegar
- 6 large eggs
- Blender Hollandaise Sauce (see recipe)
- 6 slices seeded bread, toasted
- 3 cups fresh arugula
- 12 slices tomato
- 12 slices thick-cut bacon, cooked
- Salt and black pepper, to taste

In a large saucepan, add water to a depth of 3 inches; bring to a boil. Reduce heat to simmer; add vinegar. Crack eggs and gently place in water. Simmer until desired degree of doneness, 3-5 minutes. Remove using a slotted spoon.

Spread 1 tbsp. Blender Hollandaise Sauce onto each bread slice. Top each with 1/2 cup arugula, 2 tomato slices, 2 bacon slices, and 1 egg. Sprinkle egg with salt and pepper. Top with remaining Blender Hollandaise Sauce. Serve immediately.
