BLT Eggs Benedict

Ingredients

  • 1/2 tsp distilled white vinegar
  • 6 large eggs
  • Blender Hollandaise Sauce (see recipe)
  • 6 slices seeded bread, toasted
  • 3 cups fresh arugula
  • 12 slices tomato
  • 12 slices thick-cut bacon, cooked
  • Salt and black pepper, to taste

Directions

  1. In a large saucepan, add water to a depth of 3 inches; bring to a boil. Reduce heat to simmer; add vinegar. Crack eggs and gently place in water. Simmer until desired degree of doneness, 3-5 minutes. Remove using a slotted spoon.

  2. Spread 1 tbsp. Blender Hollandaise Sauce onto each bread slice. Top each with 1/2 cup arugula, 2 tomato slices, 2 bacon slices, and 1 egg. Sprinkle egg with salt and pepper. Top with remaining Blender Hollandaise Sauce. Serve immediately.
