Spinach Artichoke Dip

Ingredients
- 10 oz pkg Cascadian Farm Organic Cut Spinach, thawed, drained
- 1/2 c. Artichoke harts, drained
- 3 Scallions, chopped
- 2 Cloves garlic
- 1 1/2 c. Plain lowfat yogurt
- 1 c. Lowfat ricotta cheese
- 3 T. Parmesan cheese, fresh grated
- 2 T. Lowfat cream cheese
- Salt and pepper, to taste
Directions

Place all ingredients in a food processor or blender and process until smooth.

For best results, chill dip overnight.

Serve with crackers or crudite.

This dip also makes a great sandwich filling.
