Ingredients
- 12 large scallions, roots and tough tops trimmed
- Olive oil cooking spray
- Salt and black pepper
- 1 1/2 to 2 lb. ground sirloin
- 2 tbsp. Worcestershire
- 2 large garlic cloves, grated
- 4 slices sharp cheddar
- Soft sesame seed burger buns
- Bread-and-butter pickle slices, green leaf lettuce leaves, a sliced beefsteak tomato and ketchup, for topping

Heat a large cast-iron skillet over medium-high to high.

Halve the scallions lengthwise. Spray the skillet with cooking spray. Add the scallions and cook, turning occasionally, until tender and charred in spots, 3-4 minutes; season with salt and pepper. Transfer the scallions to a cutting board and coarsely chop.

In a medium bowl, season the ground sirloin. Mix in the Worcestershire and garlic. Form into 4 patties.

Spray the skillet again with cooking spray. Add the patties and cook, turning occasionally, for about 8 minutes. Top with the cheese during the last minute or so of cooking. Remove from heat and cover with foil until the cheese melts, 1-2 minutes.

Arrange some pickles, lettuce and tomato on the bun bottoms. Top with the charred scallions, the patties, some ketchup and bun tops.
