Ingredients
- 2 cups sweet yellow onions, quartered and sliced
- 1/2 cup sweet cream butter
- 1/2 tsp salt
- 1 tbsp flour
- 4 cups beef stock
- 1 tbsp fresh thyme
- 1 tsp black pepper
- 4 baguette slices
- 8 slices Provolone
Directions
-
Melt the butter in a stock pot over medium heat.
-
Add the onions and salt, and saute for 3 minutes or until translucent but not browned. Add the flour and stir.
-
Add the beef stock, increase the heat to medium-high and bring to a boil. Let boil for 1 minute.
-
Reduce the heat to low, season with thyme and black pepper. Cover and let simmer for 25 to 30 minutes.
-
While the soup is simmering, toast the baguette slices to medium golden brown. Make sure each slice will fit comfortably in your soup bowl.
-
Preheat the broiler.
-
When the soup is done simmering, ladle it into oven proof serving bowls.
-
Top each bowl with a toasted baguette slice and 2 slices of Provolone. Place under the broiler for 1 to 2 minutes, or until the cheese is well melted and lightly caramelized.
-
Remove from the broiler carefully and serve immediately.
