Roast Chicken with Peppers

Ingredients

  • 1 whole chicken, cut into pieces
  • 3 tbsp olive oil, divided
  • 1 1/2 tbsp chopped fresh rosemary
  • 1 tbsp lemon juice
  • 1 1/4 tsp salt, divided
  • 3/4 tsp black pepper, divided
  • 3 bell peppers (any color)
  • 1 medium onion

Directions

  1. eheat oven to 375. Place chicken in shallow roasting pan.

  2. Combine 2 tbsp oil, rosemary and lemon juice in a small bowl; brush over chicken. Sprinkle 1 tsp salt and 1/2 tsp black pepper over chicken. Roast 15 minutes.

  3. Cut bell peppers into 1/2-inch strips. Cut onion into thin wedges. Toss vegetables with remaining 1 tbsp oil, 1/4 tsp salt and 1/4 tsp black pepper in medium bowl.

  4. Spoon vegetables around chicken; roast about 50 minutes or until veggies are tender and chicken is cooked through. Serve chicken with vegetables and pan juices.
