Keto sausage balls

Ingredients

  • 1 lb raw sausage
  • 1 8oz pkg softened cream cheese
  • 3 c shredded cheese (any kind)
  • 1/2 c coconut flour
  • 1/2 c almond flour
  • 1 tsp xanatham gum
  • 1/2 tsp salt
  • 6 eggs

Directions

  1. Mix all ingredients thoroughly

  2. Allow to sit 10 min for coconut flour to absorb liquid

  3. Mix again

  4. Roll into balls (2-3 bites each in size)

  5. Place on greased pan with space between

  6. Bake at 375 F for 45-55 minutes until light brown on top

  7. Be sure to cook through due to egg content; bake on light pan as dark pan will brown bottoms too much.

  8. Allow to cool

  9. Can be refrigerated or frozen, and rewarmed in oven or microwave
