Oatmeal Pancakes Stuffed with Chicken Strips, topped with Pecan Syrup

Ingredients

  • For the Chicken Strips:
  • 4 chicken cutlets
  • Salt and pepper, to taste
  • 1 lb. all-purpose flour
  • 2 cups canola oil
  • For the Oatmeal Pancakes:
  • 1 1/2 cups self-rising flour
  • 1 tsp baking powder
  • 1 cup old-fashioned oats
  • 1 tsp baking soda
  • 4 tbsp sugar
  • 1 tsp salt
  • 3 cups buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 oz. melted sweet butter
  • 3 oz. canola oil to grease griddle
  • For the Pecan Syrup:
  • 8 oz. melted sweet butter
  • 1 cup pecans
  • 16 oz. maple syrup

Directions

  1. Chicken Strips:

  2. Cut each chicken cutlet into 3 strips and season with salt and pepper. Dredge the chicken in flour and shake off excess.

  3. Pour oil into heavy iron skillet and heat over medium-high heat. Place chicken strips into hot oil. Fry chicken until bottom is golden brown. Using tongs, turn the chicken and brown on other side. Lower the heat if necessary to avoid burning. Continue to cook the chicken for approx. 5 to 7 minutes, turning once or twice until fully cooked. Remove chicken from pan and drain well on paper towels.

  4. For the Oatmeal Pancakes:

  5. In a medium bowl, mix all dry ingredients. Set aside. In a medium bowl, combine buttermilk, eggs and vanilla extract. Using a wire whisk, whip ingredients together for approx 1 minute. Add dry ingredients to buttermilk mixture. Add melted butter and continue to mix until batter is fairly smooth. Allow pancake mixture to rest for 10 minutes before cooking.

  6. For each pancake, pour approx 1/4 cup batter onto lightly greased griddle. Turn pancake when edges look brown and bubbles appear on top. Turn each pancake one time. Remove pancakes from griddle.

  7. To stuff pancakes, place each pancake on a plate. Place one chicken strip on edge of each pancake and roll each pancake until thoroughly wrapped around chicken strip. Place crease down on plate. Use pecan syrup recipe for added treat.

  8. For the Syrup:

  9. Place melted butter in a medium saucepan over medium heat. Add pecans and maple syrup. Stir mixture. Simmer for approx 5 minutes or until syrup is hot. Spoon over stuffed pancakes.
