Ingredients
- 6 garlic cloves, smashed and finely chopped
- 3 tbsp olive oil
- Kosher salt and black pepper
- 1 1/4 lbs. fresh French or string beans, trimmed
- 2 tbsp chopped chopped parsley or fresh dill
Directions

Bring a large pot of water to a rolling boil for the beans. Combine the garlic, oil, 1/4 tsp salt and plenty of pepper in a large bowl.

Add a large pinch of salt to the boiling water and cook the beans for 4 to 6 minutes. Immediately drain in a colander and dump into the bowl with the garlic. Toss with tongs until all the beans are well coated and the garlic releases its aroma. Add the parsley and toss again. Serve at room temp.
