Peach Coffee Cake

Ingredients
- 4 cups frozen, sliced peaches
- 2 Tbsp all purpose flour
- 3 large eggs
- 1 cup vegetable oil
- 2 cups sugar
- 1 tsp vanilla
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/4 tsp cardamom
- 1/2 tsp salt
- 2 cups all purpose flour
Directions

Preheat oven to 350F. rack in the middle position.

Place peaches in a ziploc plastic bag.

Add 2 tbsp flour, seal and shake until coated.

Set aside on counter.

Grease 9×13 inch cake pan.

Arrange peaches in bottom of the cake pan.

In medium bowl, whisk 3 eggs and vegetable oil.

Add sugar and mix until thoroughly blended.

Add in vanilla, baking soda, cinnamon, cardamom, and salt.

Add flour slowly in 1/2 cup increments. Mixing after each addition.

Scrape down bowl and give a final stir.

Pour batter over peaches in little pools.

Bake at 350F for 50-60 minutes.

Cool cake in the pan on stovetop.

When cool frost with Cream Cheese Frosting
