Ingredients
- 2 tbsp olive oil
- 1 tbsp Dijon
- 1 garlic clove, minced
- 1/2 tsp chopped fresh thyme
- 1/2 tsp chopped fresh rosemary
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 lb. tiny new red, yellow, and purple potato mixture; or quartered baby potatoes
- Flaky sea salt
Directions

Preheat oven to 375. Coat a 10×15-inch baking pan with nonstick cooking spray.

Stir together oil, mustard, garlic, thyme, rosemary, salt and pepper in a large bowl. Add potatoes and toss to coat. Transfer potatoes to prepared pan.

Roast, turning once, until golden brown and fork-tender, about 35 minutes. To serve, sprinkle with sea salt.
