Basic Pesto

Ingredients

  • 8 cups packed fresh basil
  • 1/2 cup pine nuts, toasted
  • 2 to 4 garlic cloves
  • Kosher salt
  • 1 cup olive oil
  • 1/2 cup finely grated Parmesan

Directions

  1. Pulse the basil, pine nuts, garlic and 1/2 tsp salt in a food processor or blender until the basil is finely chopped.

  2. With the machine running, gradually add the olive oil and puree until emulsified. Stir in the Parmesan.
