carrot cake-connie

Ingredients

  • mix with mixer
  • 4 eggs
  • 1 1/2 C brown sugar
  • 1/2 C sugar white
  • 1 1/2 C canola oil
  • 1 C chopped pineapple-drained
  • 1 t vanilla
  • Mix well.
  • ADD
  • 3 C grated carrot-(2 1/2c good)
  • Combine Dry in gredients-Stir with whisk
  • 2 C all purpose flour
  • 2 t baking powder
  • 1 t baking soda
  • 1 1/2 t cinnamon
  • 1/2 t ginger
  • 1/4 t nutmeg
  • 1/2 t salt
  • Add wet ingredients into dry ingredients by hand mixing just enough to combine
  • Bake 350 degrees for 25-30 minutes****I only baked 26 minutes
  • Use cake pans, greased and floured with parchment paper
  • Frosting:
  • Cream cheese frosting
  • 8 ounces softened cream cheese
  • 1 stick softened butter
  • 3 C powdered sugar
  • 1 t vanilla
  • Toasted walnuts on top as desired
