Broccoli Cornbread

Ingredients

  • 1 pkg corn muffin mix
  • 5 oz cottage cheese
  • 1 stick margarine, melted
  • 1 tsp salt
  • 1 pkg chopped broccoli, thawed & drained
  • 1 medium onion, chopped
  • 4 eggs, well beaten
  • 8 oz cheddar cheese, grated

Directions

  1. Mix cottage cheese, margarine, salt, broccoli, onion, and eggs. Stir in cornbread mix.

  2. Bake in well-greased 9″ × 13″ pan for 20 minutes.

  3. Add cheese during last 5 minutes and return to oven. Recipe freezes well.
