Sweet Tropical Loaves

Ingredients

  • *1 pkg (18 1/4 oz) yellow cake mix
  • *1 can (8 ounces) crushed pineapple, undrained
  • *1 cup evaporated milk
  • *2 eggs
  • *1/2 tsp ground nutmeg
  • *1/2 cup flaked coconut
  • Glaze:
  • *1 1/2 cups confectioners' sugar
  • *2 tbsp milk
  • *1 to 2 drops coconut extract, optional
  • *2 tbsp flaked coconut, toasted

Directions

  1. Preheat oven to 325 F. Grease two 8 × 4 inch loaf pans. In a large mixing bowl, combine the first five ingredients. Beat on low speed just until moistened. Beat on high speed for two minutes. Stir in the coconut. Pour into prepared loaf pans. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. For the Glaze: In a small mixing bowl, combine sugar and milk until smooth. Add the extract, if desired. Drizzle over the loaves. Sprinkle with coconut. Yield: 2 loaves
