Super Meringue
(from erma’s recipe box)
I made lousy meringue for about 10 years before I discovered it needed cream of tartar!
Prep time: 5 minutes
Cook time: 15 minutes
Ingredients
- 3 eggs, whites only
- 1/8 tsp. salt
- 1/4 tsp. cream of tartar
- 6 T. sugar
Directions

Beat egg whites and salt with cream of tartar in small mixing bowl at high spped until soft peaks form.

Add sugar gradually, beating well after every addition.

Continue beating until meringue stands in stiff peaks.

Spread over cooled pie filling: seal to edge.

Bake at 350 for 12-15 minutes, until browned.

(Note: Add 2 T sugar for each add’l egg white you use.)
