Mexican Holdover

This is a great fast meal for anytime. This is even good when warmed up later.
Sauce can be made ahead and casserole put together at the last minute. My youngest brother used to love this even cold for breakfast the next day.

Cook time: 10 minutes
Serves 4 people

Ingredients
- 1 pound ground meat
- 1 onion, diced
- 1 can cream of mushroom soup
- 1 can cheddar cheese soup
- 1 can rotel tomatoes with green chilies
- garlic powder or minced garlic to taste
- pepper to taste
- 1 large 15 oz. bag fritos
- 1 cup shredded cheddar cheese
Directions

Brown ground beef.

Add onion & cook till onion is tender.

Add condensed mushroom and cheddar cheese soup and rotel tomatoes .

Add spices to taste.

DO NOT ADD SALT! The fritos add enough salt.

Heat just until the sauce is warm.

Layer sauce and fritos in baking dish.

Top with cheddar cheese.

Bake in oven or microwave only until cheese melts.
