Ingredients
- 1 cup brown lentils
- 1 lg yellow onion, diced small
- 2 carrots peeled & diced
- 4 cloves garlic
- 2T fresh ginger
- 10 plum tomatoes chopped
- 1/2 cup tomato paste
- 1 cup veg stock or one cup water & 2 cubes
- 1 cup frozen green peas
- Spices
- 2t cumin
- 2t paprika
- 1t fenugreek (ground)
- 1/2t dried thyme
- 1/4t cardomon
- 1/4t coriander
- 1/8t allspice
- 1/8t ground cloves
- 1/8t cinnamon
- 1/8t cayenne pepper
- 1/2t salt
Directions

Boil lentils in large pot – 45mins

Saute onions & carrot – 10mins

Add garlic ginger & spice blend, Saute 5mins

add tomatoes – 5mins

add tomato paste & mix

add water/stock
-
Simmer till bubbling

add lentils and green peas, simmer 15mins

Serve w rice, polenta or injera
