osso buco

good with mashed potatoes

Ingredients

  • 1 onion
  • 1/2 green capsicum
  • 1/2 red capsicum
  • 3 carrots
  • 1 stalk celery
  • 5-6 garlic
  • 1/3 cup dry sherry
  • 1T balsamic vinegar
  • 1T tomato paste
  • sprig rosemary or thyme
  • 2 bay leaves
  • 2 cups chook stock
  • 2 or 3 pieces osso buco

Directions

  1. brown meat and remove

  2. fry veg 10mins

  3. add sherry and balsamic vinegar, simmer 6-8 mins

  4. add herbs and tomato paste, stock and meat

  5. mmer 1 – 1.5 hrs
