- 1/2 green capsicum
- 1/2 red capsicum
- 3 carrots
- 1 stalk celery
- 5-6 garlic
- 1/3 cup dry sherry
- 1T balsamic vinegar
- 1T tomato paste
- sprig rosemary or thyme
- 2 bay leaves
- 2 cups chook stock
- 2 or 3 pieces osso buco

brown meat and remove

fry veg 10mins

add sherry and balsamic vinegar, simmer 6-8 mins

add herbs and tomato paste, stock and meat
