French Baguettes

Ingredients

  • 1 T. melted butter
  • 1 T. salt
  • 1 T. honey
  • 2 2/3 c. lukewarm water
  • 1 pkg. dry yeast
  • 6 - 6 1/2 c. unbleached flour

Directions

  1. Combine butter, salt, honey and lukewarm water

  2. Sprinkle yeast over this mixture and add flour.

  3. Mix thoroughly

  4. Knead

  5. Let rise till doubled in warm spot. (apx. 1 1/2 hrs.)

  6. Punch down on floured surface.

  7. Let rise again for about an hour, covered.

  8. Butter cookie sheet and sprinkle cornmeal on it.

  9. Roll out dough in a flat sheet about 30 × 15 and divide into thirds.

  10. Roll each third into a narrow even loaf. Seal ends by pinching.

  11. Place loaves on the cookie sheet and cover slight with a piece of plastic film. Let rise one hour.

  12. Spray or brush the loaves with ice cold water and cut 3 or 4 diagonal slashes on the top wiht a knife.

  13. Bake at 400 degrees for 55 minutes.
