Corned Beef and Cabbage

Ingredients

  • 4 lb cured corned beef brisket w/ spice packet, trimmed
  • 1 large onion, sliced
  • 8 large carrots, large chunks
  • 2 bay leaves
  • 3 garlic cloves, sliced
  • 14 oz can beef broth
  • 2 T dark brown sugar
  • 1.5 T mustard
  • 1 t caraway seeds
  • 1 small cabbage, cut in 8 wedges

Directions

  1. Place onion and carrot in large crockpot. Place beef on top, with bay leaves and garlic on top.

  2. Combine spice packet w/ broth, sugar, mustard, and caraway seeds; pour over meat.

  3. ok on high 1 hr, low 8 hrs. Add cabbage, cook on low 1.5 hours, until cabbage is tender.

  4. Discard bay leaves and onion.

  5. Cut meat across the grain.
