Tostadas

Serves 5 people

Ingredients
- 15 Corn Tortillas
- 2 cups oil
- 1 can beans (black or pinto best)
- 1 tomato
- 2 cups cheddar cheese (shredded)
- 1 cup spinach (chopped)
- 1 cup romaine (chopped)
- 1/3 cup cilantro (chopped)
- 1 tsp. lime juice
- Salt
- pinch of pepper
- Salsa (optional)
- avocado (optional)
- sour cream (optional)
Directions

Heat oil in skillet.

Place 3 tortillas (or however many fit in your skillet) and fry them until golden brown and crispy. Drain on plate lined with paper plate, salt to taste.

While tortillas are frying, dice tomatoes.

Chop spinach, romaine and cilantro. Mix well and add lime juice, salt and pepper to taste.

Open can of bean and warm them in microwave or stove top.

Shred cheese.

Serve toppings on a cutting board or in separate bowls with warm tortillas.
