Oatmeal raisin muffins

Ingredients

  • 1 c. buttermilk
  • 1 c. rolled oats (regular)
  • 1/2 c. raisins
  • 1 c. flour (either half whole wheat and white or all white.)
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/4 t. salt
  • 3 T. wheat germ
  • 1/3 c. butter, softened
  • 1/4c. packed light brown sugar
  • 1 T. honey
  • 1 egg

Directions

  1. combine the buttermilk oats and raising and let the misture stand till the mixture is absorbed, about 30 minutes.

  2. in another bowl, combine the flour, baking powder, baking soda, salt and wheat germ.

  3. In a large bow, beat the butter and sugar until the mixture is light. Beat in the honey and the egg.

  4. In alternating batches, add the flour mixture and the oat mixture to the butter mixture, stirring to moisten.

  5. Divide the batter among 12 well greased muffin cups.

  6. Bake at 400 degrees for 25 – 30 minutes.
