London Broil with Shiitake Mushrooms

Prep time: 10 minutes
Cook time: 30 minutes
Serves 4 people
Ingredients
- 8 ounces fresh shiitake mushrooms
- 1 1/2 lb. London broil or flank steak
- 2 T olive oil, divided
- 1 t. dried thyme
- 1/2 t. salt
- 1/2 t. freshly ground pepper
- 3 cloves garlic, minced
- 2 T chopped shallots
- 2 cups beef broth or red wine
Directions

Remove stems from mushrooms, discarding stems.

Cut mushroom caps into thin slices; set aside.

Brush London broil with 1 T of the oil and rub with thyme, salt and pepper.

Grill steak, uncovered, over medium-high heat 6 to 8 minutes on each side or to desired wellness.

Cut steak diagonally across grain into thin slices.

Heat remaining 1 T oil in large nonstick skillet over medium-high heat until hot; add garlic and shallots and saute until tender.

Add broth or red wine and bring to a boil.

Reduce heat, and simmer 10 minutes or until reduced by half.

Add mushrooms and cook 5 minutes more or until tender, stirring often.

Serve with steak.
