Apple Crumb Cake

Instead of stricktly ginger as the flavoring, any combination of allspice, cloves, nutmeg, cinnamon and ginger can be used.

Serves 15 people
Ingredients
- Topping:
- 1/2 cup sugar
- 1/2 cup (1stick) soft butter
- 1 cup flour
- Cake:
- 1-1/2 cups packed brown sugar
- 1/2 cup (1 stick) butter
- 1 egg
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ginger
- 3/4 cup buttermilk (or sweet milk combined with 1 tbsp. white vinegar)
- 1 tsp. vanilla
- 3 cups diced apple or pear ( 1/2-inch pieces or smaller)
- Brandy Sauce:
- 1/2 cup packed brown sugar
- 1 tbsp. cornstarch
- 3/4 cup water
- 1-1/2 tbsp. butter
- 2 tsp. brandy or bourbon (substitute 1/2 tsp. vanilla, if desired)
Directions

Heat over to 350 degrees. Grease 9-by13-inch pan.

In a medium bowl, mix topping ingredients with a fork.

In another bowl, beat sugar and butter until completely blended. Add egg, and beat well. Combine flour, baking soda, ginger and salt. Stir into sugar mixture alternately with milk in 2-3 additions. Stir in vanilla, then apples. Pour into a greased 9-by-13-inch pan.

Crumble topping evenly over batter. Bake for 50 minutes or until a wooden pick inserted in the middle comes out clean.

To make sauce, mix sugar with cornstarch. Add water, and stir over medium-high heat until the mixture boils, about 5 minutes. Remove from heat, and stir in butter and flavoring. Serve warm over squares of cake.
