sweet and sour pork with fresh fruit

Ingredients

  • 2/3 c couscous
  • 1/2 lb lean pork shoulder
  • 1 t cornstarch
  • 1T Dry Sherry
  • 1/2 teaspoon salt
  • 1/4 t ground black pepper
  • 3/4 c pineapple juice
  • 3 T ketchup
  • 1 T cider viengar
  • 1 1/2 t sugar
  • 1 T peanut oil
  • 1/3 c diced yellow onion
  • 2 c canned pineapple chunks
  • 1 red bell pepper
  • 1 c sliced cantaloupe

Directions

  1. cook couscous

  2. cut pork into bite size

  3. combine pork w/ cornstarch, sherry s and p

  4. separetly combine pineapple juice ketchup sugar and vinegar

  5. heat wok

  6. add onion, cook 30 sec

  7. add pork cook 1 minute

  8. remove pork

  9. add pineapple and peppers cook 1 min

  10. add sauce cook 1 more minute

  11. stir in cantolope when finished
