Creamy Fruit Bowl

Serves 10 people

Ingredients

  • 1 can (20 oz) pineapple tidbits or chunks
  • 3 egg yolks, beaten
  • 2 T. sugar
  • 2 T. Vinegar
  • 1 T. Butter or Margarine
  • Dash salt
  • 3 to 4 cups mandarin oranges
  • 3 cups seedless grapes
  • 2 cups miniature marshmallows
  • 1 cup whipped cream
  • fresh mint, optional

Directions

  1. Drain the pineapple, reserving 2 tablespoons juice; set pineapple aside

  2. Pour the juice into the top of a double boiler; add egg yolks, sugar, vinegar, butter and salt.

  3. Cook and stir over medium-low heat until mixture thickens and coats the back of a spoon.

  4. Cool.

  5. Stir in Pineapple, oranges, grapes and marshmallows.

  6. Cover and chill for at least 12 hours.

  7. Fold in whipped cream just before serving.

  8. Garnish with mint if desired.
