Cheesy Cauliflower Casserole

Serves 8 people

Ingredients

  • 4 ounces saltines
  • 1/2 cup butter
  • 1 large head cauliflower
  • 1 (12 fluid ounce) can evaporated milk
  • 1/2 cup mayonnaise
  • 2 cups shredded Cheddar cheese

Directions

  1. Crumble salted crackers into a small bowl and mash them with butter until soft.

  2. Place cauliflower into a 9×13 inch casserole dish.

  3. In small saucepan, combine milk and mayonnaise with wire whisk. Bring the mixture to a boil; boil for 1 minute. Remove the pan from the heat and stir in cheese until melted. Pour this sauce over the cauliflower.

  4. Cover with tin foil and bake for 35 minutes at 350 degrees.

  5. Remove the foil, spread the cracker/butter mixture over the top and baked for 30 more minutes.
