Pasta a la Vodka

Ingredients

  • 16 oz spaghetti
  • 1 small onion, diced
  • 2 tb olive oil
  • 3 cloves garlic, minced
  • 1 26oz jar pasta sauce
  • 1 14oz can tomatoes
  • 3/4 c vodka
  • 1 tsp crushed red pepper
  • 1 c heavy cream
  • salt
  • pepper
  • fresh chopped basil
  • Parm cheese

Directions

  1. Boil pasta. Drain.

  2. Saute onion in olive oil 3 mins. Add garlic and sauté 1 min. Add sauce, tomatoes, vodka, and red pepper. Cook 15 mins, stirring occasionally.

  3. Remove from heat and stir in cream. Return to heat and warm cream, but don’t boil. Add salt and pepper. Add pasta to sauce and toss. Top with basil & parmesan.
