Black Bean and Rice Salad

Ingredients

  • 4 c chicken broth
  • 2 bay leaves
  • 2 cups raw rice
  • 2 15oz cans black beans
  • 2 red bell peppers
  • 1 gr bell pepper
  • 1 bunch chopped cilantro
  • 1 red onion, diced
  • 1/2 c olive oil
  • 3 tb fresh lime juice
  • 3 tsp ground cumin
  • 2 tb red wine vinegar
  • 3 tsp chili powder
  • salt & pepper
  • cilantro for garnish

Directions

  1. In a casserole dish, pour chicken broth and add bay leaves. Heat in the microwave 5 mins on high.

  2. Add rice, cover, and heat 20 mins on 70% power. Stir cooked rice and let it rest 5 mins.

  3. Transfer rice to largebowl and add all other ingreds. Toss well. Garnish with cilantro. Serve at room temp.
