Ingredients
- 4 c chicken broth
- 2 bay leaves
- 2 cups raw rice
- 2 15oz cans black beans
- 2 red bell peppers
- 1 gr bell pepper
- 1 bunch chopped cilantro
- 1 red onion, diced
- 1/2 c olive oil
- 3 tb fresh lime juice
- 3 tsp ground cumin
- 2 tb red wine vinegar
- 3 tsp chili powder
- salt & pepper
- cilantro for garnish
Directions

In a casserole dish, pour chicken broth and add bay leaves. Heat in the microwave 5 mins on high.

Add rice, cover, and heat 20 mins on 70% power. Stir cooked rice and let it rest 5 mins.

Transfer rice to largebowl and add all other ingreds. Toss well. Garnish with cilantro. Serve at room temp.
