Southwestern Salad

Ingredients

  • 8 ounces wagon-wheel pasta
  • 1 cup frozen corn kernels, defrosted
  • 1 cup black beans, rinsed
  • 1 cup cooked fajita-style chicken strips
  • 1 pint grape tomatoes, halved
  • 2 tablespoons fresh cilantro or parsley, chopped
  • 1 large lime, juiced
  • 2 tablespoons, honey
  • 1 to 2 teaspoons chili powder
  • 1/4 cup canola oil
  • Salt and pepper to taste

Directions

  1. Cook pasta according to package directions.

  2. Drain and rinse under cool water.

  3. Put in a large serving bowl.

  4. Add corn, black beans, chicken, and tomatoes; mix well.

  5. In a small bowl, whisk lime juice, honey, chili powder, salt and pepper, and canola oil.

  6. Pour over pasta mixture.

  7. Toss to combine.

  8. Sprinkle with the chopped cilantro or parsley.
