Ultimate Chicken Cozumel

Ingredients

  • 1 T. olive oil
  • 1/4 c. sliced almonds, raw
  • 3 minced garlic cloves
  • 4 boneless skinless chicken breasts
  • 1 1/2 c. salsa
  • 1/4 c. dried currants (or raisins)
  • 1 t. cumin
  • 1 t. cinnamon
  • 1 T. honey
  • 1/4 c. water

Directions

  1. Cut chicken breasts into 1 inch pieces and spread over bottom of crockpot. Mix remaining ingredients in a large bowl and pour over chicken.

  2. Cook on “high” for 1 hour. Turn crockpot to low and cook 6-8 hours.

  3. Serve over rice, pasta or in soft tortillas. Freezes well.
