  • 1 C dry red lentils
  • 1 bay leaf
  • 2 C diced onion
  • 2 lg garlic cloves
  • 2 T lemon juice
  • 2 C canned tomatoes (18 oz can), chopped, liquid reserved
  • 1 1/2 C quarters artichoke hearts (15 oz can)
  • 1 lb farfalle, rotini, spirale
  • crumbled feta (optional)
