Katherine’s Pot Roast

inspired by Elise’s Simply Recipes, but she wouldn’t recognize it
Prep time: 15 minutes
Cook time: 240 minutes
Serves 4 people
Ingredients
- 3-4 lbs boneless chuck roast
- salt
- pepper
- Italian seasoning
- 1 T. olive oil
- 2 t. minced garlic
- 1 can beef broth
- 2 packages stew vegetables (carrots, potatoes, celery, onions), frozen
Directions

Heat oil on medium-high heat in large pot.

Cover roast in salt, pepper, and Italian seasoning, and sear 5 minutes on each side.

Add garlic, beef broth, and frozen vegetables.

Cover and cook on extremely low heat for 4+ hours.
