African Peanut Soup (easy)

Ingredients

  • 1 T peanut oil
  • 1 clove minced garlic
  • 28 oz can chopped tomatoes, undrained
  • 6 oz can tomato paste
  • 1/2 c creamy peanut butter
  • 4 c chicken broth
  • 1 T balsamic vinegar
  • 1/4 t cayenne pepper
  • 2 t kosher salt
  • 1 cup brown rice
  • scallions or peanuts for garnish

Directions

  1. Saute garlic in oil. Add all ingredients except for rice and garnish.

  2. Bring to a boil.

  3. Add rice, turn to low heat and simmer 20 min, covered.

  4. (may take longer for rice to cook… I often pre-cook the rice in broth and then add).
