Ingredients
- 1 T peanut oil
- 1 clove minced garlic
- 28 oz can chopped tomatoes, undrained
- 6 oz can tomato paste
- 1/2 c creamy peanut butter
- 4 c chicken broth
- 1 T balsamic vinegar
- 1/4 t cayenne pepper
- 2 t kosher salt
- 1 cup brown rice
- scallions or peanuts for garnish
Directions

Saute garlic in oil. Add all ingredients except for rice and garnish.

Bring to a boil.

Add rice, turn to low heat and simmer 20 min, covered.

(may take longer for rice to cook… I often pre-cook the rice in broth and then add).
